WW Baked Blueberry Cottage Cheese Bowls

These baked blueberry cottage cheese bowls are creamy, lightly sweet, protein-rich, and filled with juicy blueberries. The texture lands somewhere between baked cheesecake, custard, and a soft breakfast bake. They’re easy enough for breakfast but sweet enough to enjoy as a healthy dessert.

Ingredients

  • 1½ cups cottage cheese
  • 2 large eggs
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons oat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • Pinch of salt
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon lemon zest, optional
  • 1–2 tablespoons powdered sweetener, optional for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease 3 small oven-safe bowls or ramekins with nonstick cooking spray.
  2. Add the cottage cheese, eggs, maple syrup or honey, vanilla extract, oat flour, baking powder, cinnamon, and salt to a blender or food processor.
  3. Blend until the mixture becomes mostly smooth and creamy. A few tiny cottage cheese curds are completely fine, but blending gives the bowls a more cheesecake-like texture.
  4. If using lemon zest, stir it into the blended mixture. Lemon works especially well with blueberries and gives the bowls a fresher flavor.
  5. Divide the mixture evenly among the prepared ramekins.
  6. Sprinkle most of the blueberries over the top of each bowl. Gently press a few berries slightly into the mixture so some bake into the center while others stay visible on top.
  7. Place the ramekins on a baking sheet and transfer them to the oven.
  8. Bake for 25–30 minutes, or until the centers are mostly set and the tops are lightly golden around the edges. The centers may still have a slight jiggle when you remove them from the oven.
  9. Let the bowls cool for about 10 minutes. They will continue to firm as they cool.
  10. Top with a few additional blueberries and, if desired, a very light dusting of powdered sweetener before serving.

Tips

For the creamiest texture, use small-curd cottage cheese and blend the batter well.
