These homemade cheesy garlic breadsticks have soft, fluffy centers, golden edges, and a generous layer of melted mozzarella. Garlic butter and Italian herbs give every bite a rich, savory flavor. Serve them warm with marinara sauce alongside pasta, soup, salad, or pizza.
Ingredients
For the dough
¾ cup warm water, about 105–110°F (40–43°C)
2¼ teaspoons active dry yeast
1 tablespoon granulated sugar
2 tablespoons olive oil
2 cups all-purpose flour, plus more if needed
¾ teaspoon salt
For the garlic butter
3 tablespoons unsalted butter, melted
3 garlic cloves, finely minced
½ teaspoon Italian seasoning
¼ teaspoon garlic powder
1 tablespoon chopped fresh parsley
For the cheese topping
2 cups shredded mozzarella cheese
¼ cup finely grated Parmesan cheese
½ teaspoon dried Italian seasoning
1 tablespoon chopped fresh parsley, for garnish

Instructions
1. Activate the yeast
Pour the warm water into a large mixing bowl. Add the sugar and sprinkle the yeast over the surface. Stir gently and let the mixture stand for 5–10 minutes.
The yeast is ready when the surface looks creamy and foamy. If nothing happens, the water may have been too hot, too cold, or the yeast may no longer be active.
2. Prepare the dough
Add the olive oil and salt to the yeast mixture. Gradually mix in the flour, beginning with about 1½ cups. Continue adding flour until a soft, slightly tacky dough forms.
The dough should feel soft and flexible. Avoid adding too much flour, as this can make the breadsticks dry and dense.
3. Knead the dough
Transfer the dough to a lightly floured work surface. Knead for 6–8 minutes until it becomes smooth and elastic.
You can also use a stand mixer fitted with a dough hook. Knead on low speed for approximately 5 minutes.
4. Let the dough rise
Lightly grease a clean bowl with olive oil. Place the dough inside and turn it once to coat the surface.
Cover the bowl with a clean towel or plastic wrap. Leave it in a warm place for 45–60 minutes, or until it has approximately doubled in size.
5. Prepare the baking sheet
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Punch down the risen dough gently to release excess air. Divide it into six equal portions.
6. Shape the breadsticks
Roll each portion into a long breadstick measuring approximately 9–10 inches. Arrange the breadsticks parallel on the prepared baking sheet, leaving a little space between them.
For softer sides, position them fairly close together. For crispier edges, leave more space between each breadstick.
Cover loosely and allow them to rest for 10–15 minutes while you prepare the garlic butter.
7. Make the garlic butter
Combine the melted butter, minced garlic, Italian seasoning, garlic powder, and parsley in a small bowl.
Brush the mixture generously over the tops and sides of every breadstick. Spread the minced garlic evenly so each one has plenty of flavor.
8. Add the cheese
Mix the mozzarella and Parmesan together. Divide the cheese evenly among the breadsticks, pressing it lightly onto the dough so it stays in place.
Sprinkle dried Italian seasoning over the cheese.
