Sticky Glazed Meatloaf is a comforting dinner with a tender center and a sweet, tangy coating. The glaze goes on in two layers: the first bakes onto the loaf, while the second creates a glossy finish. Serve thick slices with mashed potatoes, green beans, or roasted carrots. Leftovers also make excellent sandwiches the next day.

Ingredients

For the Meatloaf

  • 2 lb ground beef, preferably 85–90% lean
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 large eggs
  • ¾ cup breadcrumbs
  • ½ cup milk
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

For the Sticky Glaze

  • ½ cup ketchup
  • ¼ cup brown sugar, packed
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika

Optional Garnish

  • Chopped fresh parsley or thyme

Instructions

  1. Prepare the oven and dish. Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to leave space around the meatloaf. A baking dish allows more of the sides to brown and gives you room to brush on the glaze.
  2. Combine the meatloaf ingredients. Add the ground beef, onion, garlic, eggs, breadcrumbs, milk, Worcestershire sauce, ketchup, Dijon mustard, salt, black pepper, smoked paprika, and thyme to a large bowl. Use clean hands or a fork to mix until the ingredients are evenly distributed. Stop as soon as the mixture comes together; excessive mixing can make the cooked meatloaf firm.
  3. Shape the loaf. Transfer the mixture to the prepared dish. Shape it into an even loaf, about 9 inches long and 4–5 inches wide. Smooth the top lightly and tuck in any loose edges. Keep the loaf roughly the same thickness from end to end so it cooks evenly. Do not compress it tightly.
  4. Make the glaze. In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, Dijon mustard, apple cider vinegar, honey, garlic powder, and smoked paprika. Stir until the sugar is well mixed into the sauce. The glaze should be thick enough to brush over the meatloaf without running straight off.
  5. Add the first layer. Brush about half the glaze over the top and exposed sides of the meatloaf. Save the rest for later. This first layer begins to bake into the surface and gives the loaf its sweet and savory flavor.
  6. Bake. Place the dish on the center rack and bake uncovered for 40 minutes. Remove it carefully from the oven. If a large amount of fat has collected in the dish, spoon some of it away so the glaze does not become diluted.
  7. Add the final glaze. Brush the remaining glaze generously over the top and sides. Return the meatloaf to the oven for another 15–25 minutes. The exact time depends on the thickness of the loaf and your oven. It is done when a food thermometer inserted into the center reads 160°F (71°C).
  8. Caramelize, if desired. For a darker, stickier top, switch the oven to broil for 1–2 minutes after the meatloaf has cooked through. Stay beside the oven and watch closely. The sugar and honey can change from caramelized to burnt very quickly.
  9. Rest and serve. Let the meatloaf rest in its dish for 10 minutes. This helps it hold together when sliced. Cut into thick portions, spoon a little pan juice over each slice, and finish with fresh parsley or thyme if you like.

Notes and Tips

Choose the beef that suits you. Beef that is 85–90% lean gives the meatloaf enough fat to stay moist. Very lean beef can produce a drier loaf, while beef with a higher fat content may leave more liquid in the baking dish. If you use 85% lean beef, check the dish before adding the second layer of glaze and carefully remove excess fat.
