Instructions
1. Make the Vanilla Custard
Start with the custard so it has time to cool.
Pour the milk into a medium saucepan and warm it over medium heat until steaming but not boiling.
In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and salt until smooth and slightly pale.
Slowly pour about half of the hot milk into the egg mixture while whisking constantly. This gradually warms the eggs and helps prevent them from scrambling.
Pour the mixture back into the saucepan with the remaining milk. Cook over medium-low heat, whisking continuously, until the custard thickens. This usually takes several minutes.
Remove from the heat and stir in the butter and vanilla extract.
Transfer the custard to a bowl and cover the surface directly with plastic wrap to prevent a skin from forming. Refrigerate until completely chilled.
2. Prepare the Choux Pastry
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Add the water, butter, sugar, and salt to a saucepan. Heat over medium heat until the butter has melted and the mixture reaches a gentle boil.
Remove the saucepan from the heat and add the flour all at once. Stir vigorously with a wooden spoon until a smooth dough forms.
Return the saucepan to low heat and continue stirring for about 1–2 minutes. The dough should pull away from the sides of the pan and form a smooth ball.
Transfer the dough to a mixing bowl and allow it to cool for several minutes.
3. Add the Eggs
Add the eggs one at a time, mixing thoroughly after each addition.
At first, the dough may look separated or slippery, but continue mixing until each egg is fully incorporated before adding the next.
The finished dough should be smooth, glossy, and thick enough to hold its shape.
4. Pipe the Cream Puffs
Transfer the choux dough to a piping bag fitted with a large round tip.
Pipe small mounds, approximately 1½–2 inches wide, onto the prepared baking sheet. Leave enough space between each puff for expansion.
If the tops have small peaks, gently smooth them with a damp fingertip.
5. Bake
Place the tray in the preheated oven and bake for 20 minutes.
Reduce the temperature to 350°F (175°C) and continue baking for another 10–15 minutes, until the puffs are deeply golden and feel firm.
Do not open the oven during the first 20 minutes, as a sudden drop in temperature can cause the pastry shells to collapse.

Once the pastry shells are completely cool, use a small knife to make a hole in the bottom of each puff.
Transfer the chilled vanilla custard to a piping bag.
Pipe the custard generously into each shell until the cream puff feels pleasantly full.
Dust the finished cream puffs with powdered sugar just before serving.
Helpful Tips
The consistency of the choux dough is important. Depending on the size of your eggs and the flour, you may not need every last bit of the fourth egg. The dough should be glossy and thick enough to hold its shape when piped.
